Pumpkin Pie Chia Pudding Recipe

Ingredients
½ cup unsweetened almond milk
1/2 frozen banana
1/3 cup pumpkin puree (fresh is best, but canned will work)
1-1/2 tablespoons grade B maple syrup (honey for SCD)
1/4 teaspoon each of cinnamon, nutmeg, and ginger
1 ½ tablespoons chia seeds soaked overnight in 3/4 cups water
Directions
Blend all of the ingredients with the exception of the soaked chia seeds in a high speed blender or Vitamix! Once the mixture is smooth, add the chia seeds and blend on low just until the chia seeds are fully incorporated.
Enjoy immediately!
